Mornings are a hectic time of day. We rush around searching high and low for particular items as we try to get about our day. Breakfast becomes an afterthought, or often worse: a source of stress. These few precious hours, as well as the breakfast consumed within them, set the tone for the remainder of the day.
Oats are the backbone of breakfasts in our house. We have a repertoire of filling oat breakfasts that we rotate during the week. As many of us live in houses teeming with hungry bellies, meals that stick to the ribs are a means to survival! Granola is a great way to do this.
Traditionally, granola is baked in an oven as a large batch. Cooking it on the stove top is a great, time-saving way to create the same beloved breakfast item in a fraction of the time.
Quick Stovetop Granola
Yields: 6 cups
Time: 5-10 minutes
Ingredients:
3 tablespoons unsalted butter
4 cups rolled oats
1 cup chopped nuts: we use cashews or pecans, but any nut will do!
3/4 cup unsweetened shredded coconut
2 tablespoons flaxseed
3/4 cup dried fruit, chopped: apricots, dates, raisins, figs, your choice!
1/2 cup maple syrup
2 teaspoons vanilla extract
Pinch of salt
Directions:
1. In a large skillet over medium-high heat, melt the butter. Add oats, nuts, coconut, flaxseed, and dry fruit. Stirring to combine, browning slightly: 2-3 minutes.
2. Add the maple syrup and vanilla, stirring until well-combined. Cooking an additional 5 minutes until fragrant and slightly crispy.
3. Serve immediately and enjoy with delicious yogurt or a splash of milk!
